Crispy on the bottom, with caramelised, almost jammy tomatoes on top, and lots of olive oil, focaccia barese definitely deserves the title, or at least fights for the title, of Italy’s queen of street food. And trust me, I’m from Bari. Yes, today I’m playing at home, and I’m taking you to discover more about a tradition I grew up with. We’re going to meet Max from Dama Italian Bakery, who shows us his version of focaccia barese. Will it do justice to my childhood memories? Only one way to find out.
