Hi friends! Today I’m bringing a little Italian sunshine to the classic French Onion Soup! 🇫🇷🇮🇹
Instead of traditional Gruyère, I swapped it for creamy Asiago and plenty of Grana Padano. Because why not add some Italian soul to this French classic? 😄

Ingredients (for 4-6 servings):

• 1 kg onions, thinly sliced
• 2-3 cloves of garlic
• 60-80 g butter
• 2 tbsp flour
• 150-200 ml dry white wine
• 1 – 1.2L beef or vegetable broth
• Thyme and few bay leafs
• Salt & pepper to taste
• Toasted baguette slices
• 150-200 g cheese: Asiago + Grana Padano (or Parmigiano)

Here’s how to make it quick and delicious:

1 Slice 1 kg of onions thinly and add thyme, garlic and a bay leaf. Cook it slowly in butter for 60-90 minutes until beautifully golden and sweet. Patience is key, friends!
2 Sprinkle in 2 tablespoons of flour, stir, then deglaze with a splash of white wine. Let the wine evaporate a little.
3 Pour in 1 liter of hot beef or vegetable broth, Simmer for 20–30 minutes.
4 Toast some baguette slices and rub the them generously with garlic. Place them on top of the soup in oven-safe bowls.
5 Generously top with grated Asiago and Grana Padano. Pop under the broiler until the cheese is bubbly, golden, and irresistibly cheesy! 🧀

That’s it! Rich, sweet onions, savory broth, and that perfect cheesy crust with an Italian twist.
