


60% hydration 24 cold ferment 0.9g IDY, mozzarella, tinned tomatoes, oregano, fresh basil, anchovies. Came out quite bready in the crust, but it browned nicely with some olive oil brushed on there. The underside was pale as usual but I feel like for the equipment I've got I'm learning a little more each time.
