ingredients:
• 1/2 yellow onjon, diced
• 2 cans butter beans, drained & rinsed
• handful of basil leaves chopped
• 4 roma tomatoes, diced
• 3 garlic cloves, minced
• handful cherry tomatoes, sliced in half
• 3 tbsp tomato pasta
• block of tofu
• 2 tbsp miso paste
• 3 tbsp nutritional yeast
• salt & pepper to taste
instructions:
rinse and prep veggies. add drizzle of olive oil to a large skillet on medium/high heat. once oil is hot add onion & sauté for a few minutes until soft. add garlic and stir for a minute. add tomato paste and cook with onions for a few minutes. add died roma and cherry tomatoes. add butter beans then add salt and pepper (and other seasonings if you want). to a blender or food processor add block of tofu, miso paste, nutritional yeast & 2 large scoops of the bean mixture. blend until smooth. add back to skillet and mix with beans. adjust seasonings if needed. add more chopped basil and enjoy with toasted sour dough bread or by itself.
