Gluten free people should try Italian flour, before deciding they actually need to be gluten free. Many are just sensitive to the toxic crap American farmers spray on their crops. Plus the unnecessary additives to the flour prevalent in many American baked goods and the flours themselves. The number of actual celiacs is much smaller than the "assumed to be gluten free" people. There are many reports on YouTube of Americans on holiday in Europe describing that they don't have problems with French baguettes, German bread and all the pizzas and pasta in Italy. Pita in Greece etc.
