🧾 Ingredients
• 16 oz corkscrew pasta
• 8 tbsp butter
• 4 cups heavy whipping cream
• 1 cup evaporated milk
• 1 tbsp Spice Jamaica Reggae Blend All Purpose
• 1 tbsp Spice Jamaica Garlic & Herb Blend
• 1 cup white cheddar cheese
• 1 cup smoked gouda
• 1 cup Colby Monterey Jack
• 1 cup sharp cheddar
• 2 cups oxtail meat (shredded)
• 1 cup oxtail gravy

👨🏾‍🍳 Step-by-Step Instructions

1️⃣ Boil Pasta
• Bring a large pot of salted water to a boil
• Add pasta and cook for 10–12 minutes until al dente
• Drain and set aside

2️⃣ Make Creamy Cheese Base
• In a large pan, melt butter over medium heat
• Add:
• Heavy whipping cream
• Evaporated milk
• Stir well until smooth

3️⃣ Season It Right
• Add:
• Reggae Blend seasoning
• Garlic & Herb Blend
• Mix well and let it simmer for 2–3 minutes

4️⃣ Add the Cheese 🧀🔥
• Slowly add:
• White cheddar
• Smoked gouda
• Colby Jack
• Sharp cheddar
• Stir continuously until fully melted and creamy

5️⃣ Add Oxtail Flavor 😮‍🔥
• Add:
• Half of the oxtail meat
• Oxtail gravy
• Mix into the sauce → this is where the magic happens 🔥

6️⃣ Combine Pasta
• Add cooked pasta into the cheese sauce
• Mix until every piece is coated, creamy, and rich

7️⃣ Assemble
• Pour into a baking dish
• Top with:
• Remaining cheese
• Remaining oxtail meat

8️⃣ Bake
• Bake at 400°F for 20–25 minutes
• Until top is golden, bubbly, and slightly crispy

9️⃣ Final Touch
• Let it rest for 5 minutes
