According to the NHS, we should aim for at least one portion of oily fish like salmon per week — and if you’re anything like me, you’re always looking for easy ways to make it exciting.
Fresh, herby, a little sweet, a little salty — with that melty mozzarella and a punchy avocado salsa with basil and olives… it just works.
Ingredients (serves 2):
2 salmon fillets, diced into small cubes
1 tsp Italian herbs
1 tsp olive oil
Squeeze of lemon juice
1 tsp honey
Salt & pepper
2 wholemeal tortillas
Mozzarella slices
Rocket
1 avocado, diced
10 olives, sliced
6 basil leaves
8 cherry tomatoes, sliced in 4
Olive oil, lemon juice, salt & pepper
