Don't you just love it when your experiments turn out great? Here I am planning out a second pizza for the week. My guest requested a chicken pizza. I'm trying to be creative when I thought… BBQ! I took some rotisserie chicken, diced it and mixed in some barbecue sauce abd let it meld overnight. Also, chopped up some bacon and par cooked it the night before. One other note, I added the Gouda *after* I launched the pizza. My brain got sidetracked talking to my guest. Oh, and I sliced two fingers cutting up the chicken. That's the thing about sharp knives… Let me know what you think in the comments! Would you SMASH???

Rotisserie BBQ chicken, bacon, red onion, (diluted) Sweet Baby Ray's for base, cubed mozzarella and fresh shredded applewood smoked Gouda. Finished with fresh cilantro!

    4 minutes max temp bake + 3 minutes high broil = 7 minutes total bake time.
