






King arthur organic bread flour. Instant yeast and a 24 hour cold ferment. Rosa grande pepperoni. Whole milk low moisture supremo Italiano mozzarella hand grated. Hot honey. Lemon Herb whipped Galbani ricotta.
1 hour preheat at 500f. Done in about 5 mins. No broiler.
Really nice crunch. No flop. Nice undercarriage.
I want to try another cheese. Maybe a part skim mozzarella next time. This one separates a decent amount and becomes fairly oily. Otherwise pretty good first bake on the steel!
