


Another favorite in our small kitchen.
1st pan -> a bit of olive oil -> one onion sliced into rings -> a couple of garlic cloves sliced fine -> salsiccia removed from the casing and diced -> in with the onion rings and salsiccia -> moderate heat -> when the onions turn translucent add the garlic -> add a pair of salted anchovies* -> let them dissolve -> add a splash of hot water and add fava beans -> add some chilli and cracked black pepper (optional step)
2nd pot -> bring salted water to a boil -> add the calamarata pasta and cook until al dente
Take the pasta out and mix with the fava and salsiccia "sauce", toss everything together well, add a knob of butter (optional), toss, some grated grana padano, toss, add a squeeze of lemon juice for that little citrusy kick.
Salted anchovies* are here for that hidden umami aroma, not to be felt.
The end result is super creamy and delicious. Fava beans reward you extra with their creaminess…
