

Hi,
New to pizza making and really struggling with my dough sticking to my pizza tray. This time it was fully stuck except for the crust

Using home oven on highest temp along with pizza trays which have been oiled with olive oil.
Was my dough stretched to thin? Do I need to flour my trays?

Flour.
lightly rub a coat of oil onto the tray, and insert in oven while it’s preheating. Then when ready, use mittens to take it out, add your pizza, then bake. You’re supposed to season your pizza tray, this step seasons it.
I also used semolina on the base
Problem is your pan is heating up at the same time as your pizza . You need a stone or steel to preheat and then launch your pizza on it.
A wooden peel will make things much easier. Flour on the crust and on the peel. Practice launching with just a crust, no toppings. Before launch shake it and make sure it’s not stuck.
Parchment can help while you’re getting there. I realize it’s not quite rated for the highest heat but when you’re starting out it can make it easier and will work fine. And you can always pull it out after a couple of minutes and ditch the parchment if you want it crispier.
Honestly just buy a baking steel and you will get the best pizza from you’re oven.
