EGGPLANT ROLLATINI (ITALIAN DISH):

INGREDIENTS

STEP 1:
• Olive Oil – 2 tbsps
• Onion – 1/2 piece (chopped)
• Garlic – 6 cloves
• Tomato Sauce – 700g
• Water – 300ml
• Crushed Red Pepper
• Salt
• Parsley
• Black Pepper
° Mix all the ingredients and set the stove on medium to low heat for 20min.

STEP 2:
• Eggplant – 2 pieces (thin slices)
• Olive Oil
• Salt
• Black Pepper
• Italian Seasoning
° Use a parchment paper on a baking tray.
° Bake the sliced eggplant for 25min at 350°F.

STEP 3:
• Riccota – 600g
• Mozzarella Cheese – 100g
• Egg – 1
• Parmesan Cheese – 50g
• Salt
• Black Pepper
• Olive Oil – 1 tbsp
° Mix all the ingredients and use it to prepare the eggplant rolls as a filling.
° After making the rolls, cover it with the tomato sauce (Step 1), topping with Mozzarella Cheese and Parmesan Cheese, Oregano Leaves and Italian Seasoning (replace Italian Seasoning to basil).
° You also can use Fresh Basil 😋.
° Bake it for 25 – 30min at 350°F.
° Enjoy this delicious dish.
