I think it's suppose to be 75% hydration. I tried making the same thing the day before (14th pizza) with the outdoor oven but that was a disaster cause I couldnt get it to launch properly off the peel. So I gotta work on that part. Discouraged and annoyed, I made it again the day after but this time I'm just gonna use the inside oven. I need more practice outdoors.
