To celebrate our beloved women today we prepared the mimosa cake. According to tradition, the mimosa cake is prepared with italia sponge cake and italia custard.
To have a cream of the right consistency we also added fresh cream and mascarpone.

Sponge cake ingredients:
– 3 large eggs (170 gr)
– 120 gr of granulated sugar
– 120 gr of flour

Custard ingredients:
– 4 yolks
– 120 gr caster sugar
– 25 gr of flour
– 25 gr of corn starch
– 500 ml of fresh milk
– 1 organic lemon zest
– 200 ml of fresh cream
– 120 gr of mascarpone
– 3 tablespoons (40 gr) of granulated sugar

Bagna ingredients:
– 130 ml of Maraschino
– 70 ml of water
