Ingredients
Pesto: 2 cups fresh Basil, 50g toasted Pine Nuts, 60g Parmesan, 1/2 lemon, 70ml olive oil, pinch of Sea Salt and black pepper to taste.
Pasta: 250g Spaghetti.
Protein: 2 Chicken Breasts seasoned with chilli garlic salt and black pepper.
Sauce: 250ml Heavy Cream + Splash of pasta water.
Sides: Blistered Cherry Tomatoes.
Quick Steps:
Grind up parmesan, pine nuts, olive oil, salt, pepper, lemon juice and basil leaves until a chuncky paste forms.
Sear chicken until golden; blister tomatoes in the same pan.
Emulsify cream and pesto over low heat; toss with spaghetti.
Plate in a high nest, top with chicken, and enjoy.
