Eat More Plants! Celebrate the spring sunshine this weekend with this delicious Creamy Lemony Greens Polenta with Crispy Beans – full recipe below! ✨🫘

INGREDIENTS
4 tbsp Mr Organic Extra Virgin Olive Oil + extra to garnish
1 jar Mr Organic Cannellini Beans
150g mixed spinach & kale leaves
100g tub Julienne Bruno Superstraccia (or alternative plant based cheese)
1 clove garlic, minced

Black pepper, to season
1 cup polenta
1 lemon
Fresh parsley, to garnish
Baby cucumbers, baby carrots & crusty bread, to serve
METHOD
1. Wilt the spinach and kale leaves in a pan of shallow water. Once wilted, drain through a colander. Place the spinach and kale in a @MagimixVideos Food processor (4200XL model featured), along with the Superstraccia, minced garlic and pour in 2 tablespoons of the olive oil. Blend until smooth and creamy, then set aside.
2. Pre-heat the oven to 180 degrees celsius. Drain the jar of Mr Organic Cannellini Beans and pat dry. Scatter the beans on a baking tray, then drizzle over another 2 tablespoons of olive oil and sprinkle on a good pinch of sea salt. Shuffle to coat, then spread out evenly and place in the oven to bake for around 20 minutes until crispy.
3. Meanwhile, use the same pan for wilting the greens to cook the polenta. Add 4 cups of boiling water along with a good pinch of sea salt. Once the water is rolling, add in the polenta and stir through. Allow to cook for 10 minutes.
4. Once the polenta has cooked, stir through the cheesy greens mixture. Season well with sea salt and black pepper to taste.
5. Plate the polenta then drizzle over more olive oil to garnish, grate on the zest of the lemon and squeeze over the juice of half.
6. Remove the crispy cannellini beans from the oven, then scatter over the Lemony Greens Polenta. Garnish with fresh parsley.
7. Serve with crunchy veg crudités, such as baby carrots, cucumber or radish, and crusty bread for dipping – enjoy!
