Ingredients:
• 7 oz sheep’s milk feta
• 12 oz rigatoni
• 2–3 cups cherry tomatoes
• 4–5 garlic cloves
• 1/3 cup olive oil
• Salt & pepper
• Fresh basil
• 1/2–3/4 cup pasta water
Directions:
1. Add tomatoes + garlic to a baking dish. Drizzle with olive oil, salt, and pepper, then toss. Place feta in the center
2. Bake at 400°F for 30–35 min until tomatoes burst. Cook pasta and reserve pasta water
3. Blend feta, tomatoes, garlic, and juices with pasta water until smooth. Toss with pasta, adding more pasta water as needed. Finish with fresh basil and black pepper

Looks delicious!
It’s a staple for me still! I use Boursin or goat cheese though. Really yummy! And I blend it bc I prefer smooth over the chunks of tomato.
