Ingredients
โข 1 can sardines (in olive oil)
โข 8 oz spaghetti
โข 1 large egg, 2 egg yolks
โข ยฝ cup grated Parmigiano Reggiano
โข ยฝ cup grated Pecorino Romano
โข 1-2 tbsp lemon juice
โข 1 tsp lemon zest (optional but recommended)
โข Fresh cracked black pepper
โข Extra grated cheese for topping
โข Salt if needed (some sardines are saltier than others)

Instructions
1.Bring a pot of salted water to a boil and cook spaghetti until al dente. Reserve about ยฝ cup pasta water before draining.
2.In a bowl, whisk together eggs, Parmigiano Reggiano, Pecorino and black pepper until creamy.
3.In a pan over medium heat, add the sardines with their oil ( EVOO) . Lightly break them up and warm them through. No need to overcook.
4.Add the hot drained pasta to the pan with the sardines and toss.
5.Pour the pasta in the egg and cheese mixture, tossing quickly so the sauce becomes creamy (not scrambled). Add a splash of reserved pasta water if needed to loosen the sauce.
6.Finish with more grated cheese, black pepper, squeeze of lemon juice and lemon zest. Serve immediately.
