





As you can see in the pics, I only have the tiniest convection oven. Baking pizza is … a challenge.
But I do have a cast iron griddle (tawa here in India, used for cooking roti and other flatbread).
Dough made as normal (65% hydration? I didnt measure that exactly. Overnight bulk rise in fridge), then the raw pizza crust is transfered to the hot tawa to get a good rise and a decently crispy bottom, then I applied tomato sauce and let it get some colour under the grill. Lastly I added the toppings, and baked it in 250C for maybe 10 minutes until cheese looked good.
Yeah, it was a lot of work, but frankly a success. I forgot to take a pic of the underside of a slice, because I was slightly stoned and very excited.
Toppings are homemade tomato sauce, locally made low moisture buffalo mozararella, garlic fried mushrooms, onion, basil, and a roasted chili and raw garlic infused oil.
