30-Minute Italian Sausage & Rapini Orecchiette
Ingredients:
– 1/4 cup extra virgin olive oil (plus for drizzling)
– 2 Italian sausages
– 2 minced garlic cloves
– 2 minced red chilli peppers or 1 teaspoon dried peperoncino
– 200 grams fresh or dried orecchiette pasta (or enough for 2 persons)
– 1 large bunch rapini
– 3/4 cup grated Pecorino Romano cheese (or Parmigiano Reggiano) (plus for serving)
– A ladle of pasta water
– Salt and pepper to taste
Instructions:
1. Bring a large pot of salted water to a boil. Remove the casings from the sausages and wash the rapini, removing the stems and keeping the leaves.
2. Heat the olive oil in a pan. Add the minced garlic and red chilli peppers, tossing them together. Then, add the sausages. While the sausages cook, salt the boiling water with a tbsp of salt and add in the Rapini. Season the sausage mixture with salt and pepper.
3. After about a minute, add the fresh pasta in with the rapini. If using dried pasta, add it first, then add the rapini 4-5 minutes before the pasta is done. Stir and cook the sausages until golden brown and crispy. Once the pasta and rapini are cooked, add them to the sausage mixture. Toss everything together and cook for another minute while stirring.
4. Lower the heat to low and add the grated Pecorino Romano cheese along with a ladle of pasta water. Stir vigorously until everything is well combined.
5. Serve with a drizzle of extra virgin olive oil and top with more Pecorino Romano cheese.
