* 300g Tipo 00 Flour * 200g Water * 6g Salt * 55g Preferment
**Steps**
1. Mix preferment and let rest until doubled 2. Mix all on medium for 5 minutes with a hook. 3. Bench knead, divide in half and make a tight ball 4. Refrigerate for 72 hours and bring back up to room temp 5. Press out to 10in and dress 6. Cook on steel under a preheated broiler until golden
