Tried this place in town for the first time. Was wondering if anybody could explain why the undercarriage looks like this. Was chewy not crisp at all, was kinda like a dense white bread.
Cooked on a screen or conveyer oven which doesnt allow the moisture to be removed the way it baking directly on stone or steel does. It still allows it to brown, but not crisp in the same way.
