Chicken Marsala with Pasta (Serves 10)
Ingredients
Chicken
5 lbs boneless skinless chicken breasts (about 10 breasts), sliced horizontally into thin cutlets
2 cups all-purpose flour
3 tsp kosher salt
2 tsp black pepper
Cooking Fats
3 tbsp beef tallow
3 tbsp olive oil
4 tbsp unsalted butter
Marsala Sauce
2½ lbs cremini or button mushrooms, sliced
8 cloves garlic, minced
2 shallots, finely diced
2½ cups dry Marsala wine
3 cups chicken stock
1½ cups heavy cream
3 tbsp butter (for finishing)
1 tsp black pepper
2 tsp kosher salt (adjust to taste)
Pasta
3 lbs pasta (fettuccine, pappardelle, or linguine work best)
2 tbsp salt for pasta water
Finish
½ cup parsley, finely chopped
1 cup grated parmesan cheese
Optional squeeze of lemon
Instructions
1. Prep the Chicken
Slice chicken breasts horizontally to create thin cutlets.
Season flour with salt and pepper.
Lightly dredge chicken in flour and shake off excess.
2. Sear the Chicken
Heat a large skillet over medium-high heat.
Add 1 tbsp beef tallow + 1 tbsp olive oil + 1 tbsp butter.
Sear chicken in batches until golden brown, about 3–4 minutes per side.
Remove and set aside (it will finish cooking later).
Repeat until all chicken is browned.
3. Cook the Mushrooms
In the same pan add another 1 tbsp tallow + 1 tbsp olive oil.
Add mushrooms and cook until deeply browned (about 8–10 minutes).
Add shallots and cook 2 minutes.
Add garlic and cook 30 seconds.
4. Deglaze the Pan
Pour in the Marsala wine.
Scrape up all browned bits.
Reduce wine by about half (5–7 minutes).
5. Build the Sauce
Add chicken stock and simmer 5 minutes.
Add heavy cream and stir.
Return chicken to the pan and simmer 8–10 minutes until cooked through.
6. Finish the Sauce
Stir in 3 tbsp butter.
Adjust salt and pepper.
Add chopped parsley.
7. Cook the Pasta
Bring a large pot of salted water to a boil.
Cook 3 lbs pasta until al dente.
Reserve 1 cup pasta water, then drain.
8. Combine
Add pasta to the Marsala sauce.
Toss everything together.
Add a splash of pasta water if the sauce needs loosening.
9. Serve
Plate pasta, top with chicken, and finish with:
grated parmesan
parsley
optional lemon squeeze
