Search for:

Herb + Garlic Feta was on special at the grocery store so I figured I’d try it with a classic pepperoni.

Sourdough Recipe:

2/3 Cup Bubbly, Active Starter

1 5/8 (1 cup + 10 Tbsp) Water

1 3/4 Tsp Salt

1 Tbsp oil

4 Cups Flour

1 Tbsp Honey

Combine water, starter + sugar, then salt, oil then add flour.

Mix until a shaggy dough forms, let rest lightly covered 30 mins

Stretch and fold 4 times, every 30 mins

Let rest 6-8 hours to rise

Then in the fridge for 72 hrs

On the counter for 5-6 hours before stretching

Toppings:

Martelli Passata

Oregano

Crushed Chilis

Ezzo Pepperoni

Fresh Mozzarella

Herb + Garlic Feta

Grated Parmigiano

Baked on a preheated inverted baking sheet at 425 in a home oven, approx. 15 mins
