This is authentic Italian lasagna alla Bolognese. Rich, slow-simmered meat ragu. Silky béchamel. Perfectly layered noodles. Golden bubbly cheese. Better than any frozen box. Better than most restaurants. And you made it yourself.

📌 RECIPE :

For the Ragu Bolognese:

· 2 tbsp olive oil
· 1 onion, finely diced
· 1 carrot, finely diced
· 2 celery stalks, finely diced
· 500g ground beef
· 250g ground pork
· 1 cup red wine
· 700g tomato passata (or crushed tomatoes)
· 2 tbsp tomato paste
· 2 bay leaves
· Fresh thyme
· Salt and pepper

For the Béchamel:

· 50g butter
· 50g all-purpose flour
· 500ml whole milk, warm
· Fresh nutmeg, grated
· Salt and white pepper

For Assembly:

· Fresh or dried lasagna noodles (no-boil or regular)
· 250g fresh mozzarella, torn
· 100g Parmesan, grated

Method:

Ragu Bolognese (Make First):

1. Heat olive oil in large pot over medium heat
2. Add onion, carrot, celery (soffritto), cook 5-7 minutes until soft
3. Add beef and pork, break up with spoon, cook until well browned (10 minutes)
4. Pour in wine, scrape bottom, cook until evaporated
5. Add passata, tomato paste, herbs, salt, pepper
6. Bring to simmer, reduce heat, cover partially
7. Cook minimum 2 hours (3-4 better), stir occasionally
8. Remove bay leaves, adjust seasoning

Béchamel:

1. Melt butter in saucepan over medium heat
2. Add flour, whisk constantly 2 minutes (cooks out raw flour)
3. Slowly add warm milk while whisking continuously
4. Cook until thickened and smooth (5-7 minutes)
5. Season with nutmeg, salt, white pepper
6. Cover surface with plastic wrap to prevent skin

Assemble:

1. Preheat oven to 375°F (190°C)
2. Spread thin layer ragu in baking dish
3. Layer noodles (slightly overlapping)
4. More ragu, béchamel drizzle, mozzarella, Parmesan
5. Repeat layers 3-4 times, ending with béchamel and generous Parmesan
6. Cover with foil, bake 35 minutes
7. Remove foil, bake 10-15 minutes until golden and bubbly
8. REST 15 MINUTES (critical for clean slices!)
9. Slice, serve, watch them lose their minds
