Well executed, Chef!!! I’m a big mushroom fan, so I’d like to try this. My biggest challenge is that the grocery stores around me in Colorado do not carry many of the ingredients you use in various recipes.
If you can offer substitutes for the Blue Oyster and White Clamshell mushrooms, I might be able to make it work. I’m open to suggestions. No problem with getting Portabella or Maitake mushrooms and the Tallegio cheese. 👍🏼
I just wish it was easier to find some other ingredients. It’s nothing like back east. I try my best to find alternatives. 🇮🇹🇺🇸🥂
Maitake mushrooms are one of my favorite mushrooms along with king trumpet mushrooms 👍 hard to find where I am Whole Foods is the only place I can find them

This has a lengthy process 🫣I want food as my hunger begins.
I would at least try this once.. because my God.. my son would LOVE this..even if I had to change the crepe method..for pasta as..my goodness he loves all pasta,.but loves mushrooms and all things parm. But is there something other than mint as an ingredient
. neither of us like it and it is a strong flavor, possibly not as much with everything else and it's whole..hope to admit or at least use even parsley or something else
