Lemon Herb Salmon 🍋🍣Ingredients:4 salmon fillets (4–5 oz each)2 Tbsp avocado oil2 tsp minced garlic1 tsp Italian seasoning½ tsp salt¼ tsp black pepper1 lemon (½ juiced, ½ sliced)
Instructions:Preheat oven to 400°F and place salmon on a parchment-lined baking sheet. Mix avocado oil, garlic, Italian seasoning, salt, pepper, and lemon juice. Spoon over salmon and top each fillet with a lemon slice. Bake 12–16 minutes, until salmon flakes easily.
Crispy Brussels Sprouts 🌱Ingredients:4 cups Brussels sprouts, quarteredAvocado oilSalt and pepper1–2 Tbsp hot honey
Instructions:Toss Brussels sprouts with avocado oil, salt, and pepper. Roast at 400°F for 20–40 minutes, tossing halfway, until crispy. Drizzle with hot honey before serving.
Steamed Butternut Squash 🍠Ingredients:1 butternut squashButterSalt
Instructions:Slice squash into 4–6 large chunks. Steam until very soft, about 30–45 minutes. Mash lightly and serve with butter and salt.
