Chicken:
∙ 32 oz chicken breast, cubed
∙ Light spray of avocado oil
∙ 2 tsp garlic powder
∙ 1 tsp onion powder
∙ 2 tsp smoked paprika
∙ 1 tsp Italian seasoning
∙ ½ tsp salt
Season chicken, mix well, and set aside in the fridge.
Potatoes:
∙ 880g gold potatoes, cubed
∙ Light spray of olive oil
∙ 1 tsp smoked paprika
∙ 1 tsp onion powder
∙ 1 tsp garlic powder
∙ ½ tsp salt
∙ 1 tsp Italian seasoning
Air fry at 385°F for 20–25 min until golden brown.
Chicken cooking:
Cook on a preheated pan, medium-high heat, 5 min each side. Move around until internal temp hits 165°F. Set aside.
Garlic Parmesan Sauce:
∙ 260ml fat free milk
∙ 8 Light Laughing Cow cream cheese wedges
∙ 40g Parmesan cheese (divided)
∙ ½ tsp garlic powder
Drop heat to LOW. Pour in milk, add Laughing Cow wedges, stir until thick and smooth. Add 20g Parmesan and garlic powder. Toss in the chicken, mix it up. Add the remaining 20g Parmesan. Pour in the potatoes. Top with 55g fat free cheese, stir until melted.
Divide into 4 containers.
Reheat instructions: Microwave with the lid lightly on for 1 min 30 sec. Remove lid, stir it all up, then microwave 1 more minute. Perfect every time.
