If you know me, you know pizza is kind of my thing. We run pizza tours in the United States, and I’ve spent years paying attention to dough, ovens, sauce, and technique.

But every time I’m in Italy, especially where authentic Neapolitan pizza began, I’m reminded how simple it’s meant to be. The ingredients are pure. The mozzarella is fresh. The tomatoes are balanced and bright. The crust is tender with just the right char from a wood-fired oven.

There’s no excess. No overcomplicating it. Just skilled hands that have been making pizza this way for generations.

When you sit down in a small pizzeria in Italy, you don’t just taste the difference. You understand it.

It reminds me of why I fell in love with pizza in the first place.
