This yummy baked pasta recipe is the best comfort food! The combination of delicious and healthy ingredients makes for a great dinner centerpiece. Serve it with fresh salad and warm bread and you’re all set!
Pesto Baked Pasta
1lb italian ground sausage
1 sweet onion, finely chopped
4 cloves garlic, minced
4 cups marinara sauce
6 Tbsp basil pesto
salt/pepper, to taste
16 oz penne, cooked
8 oz mozzarella, diced
1 cup shredded parmesan
6 oz fresh baby spinach
1. Brown sausage in skillet for 5 minutes. Add onion; saute until tender. Stir in garlic; cook for 1 minute. Drain.
2. Add sauce and simmer until sauce begins to thicken (about 10 min). Stir in pesto, salt, and pepper. Remove from heat.
3. Spread a thin layer of sauce mixture into a 9×13 baking dish.
4. Combine remaining sauce mixture with pasta, mozzarella, 1/2 cup parmesan, and spinach. Mix well and spoon into baking dish. Sprinkle with remaining parmesan.
5. Bake uncovered at 375° F for 25-30 minutes.
