📝 Ingredients:
• 200g spaghetti
• 100g guanciale (or pancetta)
• 2 egg yolks + 1 whole egg
• ½ cup grated Pecorino Romano
• Freshly cracked black pepper
• Salt (for pasta water)

1. Boil salted water and cook spaghetti until al dente.
2. Cook guanciale in a pan until crispy and golden.
3. In a bowl, whisk egg yolks, whole egg, Pecorino Romano, and black pepper.
4. Add hot pasta to the pan with guanciale (save a little pasta water).
5. Remove from heat and quickly mix in the egg mixture.
6. Add a splash of pasta water and toss until creamy and smooth.
7. Serve immediately with extra cheese and black pepper.
