Our Family Manicotti Recipe ❤️
This authentic Italian manicotti is made completely from scratch with delicate homemade pasta shells and a creamy ricotta filling. It’s simple, comforting, and perfect for Sunday dinner or special occasions!
🥚 For the Manicotti Shells (Makes ~15 shells)
Ingredients:
3 eggs
1 cup 00 flour
1 cup water
Method:
In a bowl, whisk together eggs, 00 flour, and water until smooth. The batter should be thin and lump-free.
Heat an 8-inch non-stick pan over medium heat.
Pour about 1/4 cup of batter into the pan and swirl to create a very thin layer.
Cook for about 1 minute, or until fully set (no flipping needed).
Carefully remove and repeat until all batter is used (yields about 15 thin shells).
🧀 For the Ricotta Filling
Ingredients:
15 oz ricotta
1/3 cup shredded Pecorino Romano
1/3 cup diced mozzarella
1/4 cup fresh chopped parsley
1/2 teaspoon freshly ground nutmeg
Salt & pepper to taste
Method:
In a bowl, mix ricotta, pecorino, mozzarella, parsley, nutmeg, salt, and pepper until well combined.
Spoon or pipe filling evenly into each manicotti shell.
🍅 Assemble & Bake
Spread your favorite tomato sauce in a baking dish.
Place filled manicotti shells into the dish.
Spoon more sauce over the top.
Bake at 375°F (190°C) for about 15 minutes, or until heated through and cheese is melted.
