Italian Mac and cheese
Ingredients for 6 people
300 grams guanciale or pancetta
For the béchamel
90 grams of fat (use the guanciale fat and add butter the get to 90 grams)
1 shallot
1/2tablespoon of parsley
1 rosemary sprig
1 medium shallot
80 grams plain flour
Salt, pepper and nutmeg to taste
Cheese
150 grams provolone
150 grams smoked scamorza
80 grams taleggio
50 grams pecorino
Handful of grated mozzarella
Parmigiano to cover the top of our mac and cheese
Extra mozzarella to put on top
250/300 grams of pasta
190 degrees celsius standard oven (preheated) for around 20/30 mins, or until golden on top.
