Let me show you how to make a one-pot creamy pasta with beans… and yes, I said beans, not cream! This is the kind of comforting Italian meal that comes together in just 20 minutes, exactly the way a weeknight dinner should.

It’s a great way to get more protein from the beans into your diet, and when I shared this on social media, everyone went crazy for it!

This dish proves you don’t need expensive ingredients to make a rich, silky sauce. It’s a cheap meal to feed the whole family, and it’s become a regular in my kitchen, especially on busy nights.

Ingredients:
8 oz Tubetti pasta (or Ditalini)
2 cans Cannellini beans (drained and rinsed)
1 Yellow onion, thinly sliced
1 Garlic clove, minced
2 tbsp Tomato paste
6 oz Fresh spinach
4 cups Vegetable broth
Extra virgin olive oil
Salt & Black pepper, to taste

Directions:
1. In a large skillet or wide pan, sauté the sliced onion and garlic in olive oil over medium heat until soft and fragrant.
2. Stir in the tomato paste and cook for 1-2 minutes to deepen the flavor.
3. Add the cannellini beans and cook for 2-3 minutes, letting them toast slightly with the aromatics.
4. Add the spinach and season with salt and pepper. Stir until it begins to wilt.
5. Pour in the vegetable broth and the pasta. Lower the heat and cook for about 10 minutes, stirring often. Add a splash of water if it gets too thick.

  3. So glad I came across your videos. I love beans so had to try this and it turned out really delicious. What a treat on a chilly day when I feel like I'm coming down with a cold. I added a large chopped zucchini and subbed with farfalle because the store i was at didnt have ditalini. Then I lightly crisped some more chopped garlic with a little dried rosemary in kerrygold butter and olive oil to drizzle on as a savory topping. 🤌❤

  6. Very good. I had some soffit already chopped up so I used that. Changed things a bit because I first sauted this in olive oil. Then continued as u did. Then I had to use frozen spinach. But it was close and very tasty.

  8. I made it and it was indeed very creamy. Even next day, but next time I‘d add a good load of parmesan or pecorino on top – it lacked a bit of substance for my caloric desires :D. The creaminess without any milk products was really something else tho!
