Dressing
▢½ cup Greek yogurt full-fat, nonfat or non-dairy all work
▢¼ cup mayonnaise or vegan mayo
▢1 tablespoon apple cider vinegar
▢1 tablespoon mustard yellow or Dijon
▢½ clove garlic grated – or more to taste
▢1 tablespoon capers chopped – sub Worcestershire sauce
▢⅓ cup grated Parmesan
▢3 tablespoons water or more to thin
▢½ teaspoon salt or more to taste + black pepper
Salad
▢1 can butter beans 15 oz / 400 g can – drained and rinsed
▢3 cups romaine lettuce chopped – more or less to taste
▢1 cup cherry tomatoes halved
▢⅓ cup sun-dried tomatoes in oil drained and chopped
▢¼ cup shaved Parmesan
▢½ cup croutons sub broken crostini, grissini, or taralli
