Ingredients:

1/2 lb. of spaghetti
1/2 yellow onion sliced
2 cloves chopped garlic
1/4 cup Extra Virgin Olive Oil
1 bunch of broccoli rabe
Salt to taste
Fresh Cracked black pepper to taste
Red pepper flake (optional)
Fresh grated Pecorino Romano cheese

Start by slicing half an onion and saute on low medium heat for about 5-7 minutes with a good amount of Extra Virgin Olive Oil. Take a bunch of broccoli rabe, slice into three sections, discard the stock section and blanch for about 2-3 minutes in salted, boiling water then strain and rinse in cold water. Drop half a pound of spaghetti in salted, boiling water and cook until al dente. Add in 2 chopped garlic cloves to the onions and saute for about 1 minute. Add in the blanched broccoli rabe and stir until the oil, onions and garlic are well incorporated. Salt to taste and add fresh cracked black pepper to taste, I like to add a little red pepper flake as well for spice. Add in the al dente spaghetti and toss it all together. Grate on a generous amount of fresh Pecorino Romano or Parmesan and enjoy! Guys this one is a classic from my childhood and I hope you can make it a classic with your family too.
