  2. Looks delicious. I think a blender releases too much onion water into a soffrito, but’s probably fine here since you don’t want to brown anything. I love a little chicken fegato added but I’m not bolognese!

  3. Travelled across Italy: Milan, Verona, Garda, Venice, Florence, Castiglioncello, Rome – can confirm – no one makes it the same way. How dare you not put garlic in 🙂
