🛒 Ingredients
1 large French bread loaf (store-bought bakery loaf)
1 cup pizza sauce (I like Rao Homemade Pizza Sauce)
2 cups shredded mozzarella
20–30 pepperoni slices
2 tbs butter (melted)
½ tsp garlic powder
½ tsp Italian seasoning
Red pepper flakes
Sea salt flakes

Temp: 250–275°F
Indirect heat
👨🍳 Step-by-Step
1️⃣ Prep the bread
Slice loaf in half lengthwise.
Mix melted butter + garlic powder.
Brush cut sides lightly.
2️⃣ Pre-toast (important)
Place bread cut-side up on smoker for 5–7 minutes.
You want it slightly dry on top.
This keeps sauce from soaking in.
3️⃣ Build the pizza
Spread sauce evenly.
Add mozzarella.
Add pepperoni.
Sprinkle Italian seasoning.
and red pepper flakes (optional)
4️⃣ Smoke it
Return to smoker at 250–275°F.
Cook 20–30 minutes until:
Cheese fully melted
Edges golden
Bottom slightly crisp
5️⃣ Rest & slice
Let sit 5 minutes.
Slice into strips.
