Ingredients:
– 1 cup carrots
– Half onion
– 1-3 celery stalks
– 1-2 lbs. Chicken breast
– 2 Cups Heavy cream (or 1 cup Half and Half + 1 cup heavy)
– 2 tbsps Italian Seasoning (or desired amount)
– Spinach leaves (to preference)
– Salt & Pepper
– Gnocchi (to preference)
– 16oz Chicken Broth (or Chicken Bone Broth)
– 2-4 Tbsps. of Olive oil (any oil is fine or butter)
– Minced garlic (to taste/if desired)
Chicken and Soup can start at same time then add cooked chicken to mix.
Chicken:
– Heat 1-2 tbsps of oil on skillet or griddle
– Season chicken with Salt / Pepper to taste
– Cook chicken breast all the way through
– Dice, Cube, or shred chicken to be added to soup
Soup:
– Mince / Cut onion, celery, and carrots as preferred
– Heat 1-2 Tbsps of oil in pot/Dutch Oven over Medium heat
– Cook Celery, Onions, Carrots & Minced Garlic until onions are translucent
– Add Chicken Broth and bring to boil
– Add Shredded Chicken, Salt/Pepper, Italian Seasoning & Gnocchi
– Let boil for 3-5 minutes
– Bring heat down to a simmer and add heavy cream
– Let simmer for approx. 10 minutes
– Add spinach leaves to taste and serve
