If comfort had a flavor, this would be it for me. This ultra-creamy Italian pasta is one of those humble, cozy dishes made with simple ingredients that you probably already have at home. It’s rich, and so satisfying.
Ingredients:
300 g pasta (10.5 oz)
500 g potatoes (about 3½ cups diced, 17.5 oz)
1 shallot or onion
15 g tomato paste (1 tbsp)
About 1 liter water (4 cups, add more if needed)
Salt, to taste
2 tbsp olive oil (30 ml)
100 g provolone cheese (optional) (about 1 cup shredded)
50 g Parmiggiano (about ½ cup finely grated)
Instructions
1. Heat olive oil in a large pot over medium heat. Start by sizzling a diced onion. Once it’s golden, add the diced potatoes cook gently for about 5 minutes.
2. Stir in the tomato paste and let it cook for a minute to deepen the flavor.
3. Add the water, optionally the parmigiano crust (just scrape off the outer layer to clean), season with salt, and let everything simmer.
4. After simmering for about 5 minutes, when the potatoes become more tender, mash some of the potatoes to naturally thicken the sauce.
5. Add the mixed pasta and the blended cream and cook until al dente, stirring often.
6. Let everything cook until the pasta is al dente and ready.
7. Finish with grated cheese, provolone if you like and freshly cracked black pepper.
8. Serve hot with extra Parmigiano on top and enjoy this cozy, indulgent bowl of comfort.
