Polenta Concia

I heard about polenta concia directly from a chef friend from the region, but I had never made it before and I’ve never been there, so I decided to cook it in my own winter way. Don’t hate me for that, sometimes I like to find my own way into some recipes to make them mine.

  5. Romanians and Italians are cousins via our common Roman ancestors, from whom we both inherited polenta – or as we call it here, "mămăligă".

    So it's no surprise that we have a very similar dish to polenta concia, called "bulz". It's a very rustic dish of mămăligă with any kind of Romanian cheese and bacon you like. You can either layer them up like this and bake them in the oven, or form them into balls of polenta with cheese and meat filling and grill them instead.

I'll be honest with you, I have never had a polenta dish that I have truly enjoyed, except the one time I went walking near Valle d'Aosta and then I had some after the end of the walk in a rifugio cooked by a friendly old man after it had dumped a lot of rain on me and I nearly got hit by lightning.

    Anyhow my personal rule is to avoid polenta unless it's cooked by alpine farmers and I'm hungry enough to eat a horse or twelve.

    This looks good enough for me to try and make it myself and I know that I'll be annoyed when I don't like it… Maybe I'll try making a risotto analogue of some sort if I can find the correct cheese anywhere.

  8. WOW! This polenta looks devine! And the smell of lard and cheese is the most comforting thing ever. Also, thing that people tend to forget, polenta is close to be an instant dish, the basic one can be prepared in 5 minutes and then you can dry it and make 10 more dishes!
