


This is a 58% hydration dough that started with a poolish. Tons of flavor…might be my best yet. I used Trader Joe's mozzarella and some house made pepperoni from a local Italian grocery store here in Arizona. This was cooked indoors at 550on a baking steel. I used a mix of bread flours and I'm an also love basil on on my pizza . Enjoy it !!
