

68% hydration. Used my kitchenaid for the first time instead of just stretching and folding. Worked great but the dough was pretty sticky and I almost ruined it taking it out of the bowl. Tomato sauce made with frozen tomatoes from my garden. Trader Joe’s whole milk mozz. Gonna add some part skim next time to hopefully improve browning of the cheese. Cooked at 700 top and 700 bottom temps in my Gourmia oven. A little floppy in the middle, but only because I stretched it until it was almost translucent and loaded her down with cheese and sauce. I intended to brush the dough with oil but forgot before launching. Would’ve taken it up a notch but oh well
