    – perciatelli noodles
    – 1 yellow onion
    – 3 tbsp olive oil
    – 2 tbsp garlic
    – 1 cup heavy cream
    – 1/4 cup butter
    – salt & pepper to taste
    – italian seasoning & parsley
    – splash of pasta water

    •Instructions

    – boil the pasta for 10 minutes or al dente then strain making sure to leave at least 1/4 cup pasta water for the sauce.
    – dice one whole yellow onion and sauté low and slow in 3 tbsp of olive oil until golden brown
    – add a splash or water when onions stick to deglaze the pan
    – when the onions are golden brown add 2 tbsps of minced garlic and sauté until fragrant
    – add 1 cup of heavy cream to the onions and garlic, stir
    – add 1/4 cup of butter, stir
    – turn off your heat and add 1/2 cup of fresh grated parmesan and stir until smooth
    – add your seasonings & salt and pepper to taste
    – finally add your noodles into the sauce and stir well
    – add a splash or pasta water as needed to help the sauce stick to to noodles
    – garnish with more grated parmesan and fresh parsley
