Spent more time than I care to admit trying to recreate a New Haven style pizza in my Ooni volt 2. After hours of researching their stretching technique (actually not stretching at all but rather pressing) their suspected dough hydration, and fermentation style I think this is as close I’m gonna get without the coal fired oven. Not gonna stop trying to make it better because it’s my current obsession but I’d be lying if I said I wasn’t proud of this one. The texture was spot on and I’d like to think to think the taste was pretty much there. The picture is pretty awful and I forgot to take it before trying a slice but trust me it looked better in person…
