Italian Queso Recipe

Serves: 8

4 C whole milk
2 T unsalted butter
2 T all-purpose flour
2 C fontina cheese, shredded
½ C parmesan cheese, grated
¼ C Calabrian chilis (more to taste)
½ tsp. Italian seasoning
¾ tsp. garlic powder
½ tsp. kosher salt

Melt the butter in a medium Dutch oven (or pan with a heavy bottom) over medium heat, then add the flour and whisk until smooth. This will cook the raw flour taste out and will take about 2 minutes.

Slowly whisk in the milk, then bring to a boil, reduce to a simmer and cook, whisking constantly, until the mixture begins to thicken. This will take about 5-7 minutes.

Add in the Italian seasoning, garlic powder and salt.

Take the pot off the heat and whisk in the cheeses a bit at a time till smooth. Taste for seasoning, you may want to add in more garlic powder or salt.

Finally, stir in your Calabrian chilis and pour into a small slow cooker set to warm. Serve with your favorite tortilla chips, pita chips, crostini or focaccia.
