Kenji's Sicilian with:
1T powder milk to dough
a *light* sprinkle of salt, msg. and garlic powder in oiled sheet pan
sauce spiciness diluted with extra tomato paste & water
hand sliced Winco whole milk mozz
full 5-oz package of Hormel cup & crisp (<1/2 recipe)
1/3 pie with spam & ricotta
3oz parm
baked at 550 and decked 2 min out of pan on steel for extra crisp.
I even tried a slice with drizzle of hot honey.
I was pleased. I think I'll look for a good whole milk deli mozz to get even slices. And switch to quarter (9×13) pans because getting the whole 13×19 out of pan gets a little sketchy.
