Tagliatelle with Ragù Bolognese

I followed the recipe by the Bologna Chamber of Commerce, the only difference is that the butcher didn't have fresh pancetta and I replaced it with minced pork meat (the butcher minced both beef and pork together). Overall the ragù cooked for 4 hours (+ soffritto).
