Nonna Vittoria showed us to make the “pitonca” or “infarinata”. It’s a traditional, rich, and complex dish originating from the Garfagnana area. The preparation involves a range of ingredients, including celery, carrots, leeks, potatoes, beans, kale (cavolo nero), and lard (strutto). You can eat it straight from the pot or let it cool down, cut it into squares and then fry it. That is Vittoria’s favourite way of eating it

I was born in the area but never heard of this dish. In Pisa there is something similar, called Bordatino, made with corn flour.
