Today we’re in Piacenza at @ristorante_lapalta with chef Isa Mazzocchi, who through her cuisine has restored honor and prominence to a nearly forgotten dish: the Pastiss Piacentino.
Pastiss dates back to the Renaissance and reflects the sweet-and-savory tradition typical of that era. A sweet shortcrust pastry—less sugary than usual—encases dried pasta traditionally dressed with pigeon stew, amaretti cookies, and grated Parmigiano Reggiano. This wonderful creation is finished tableside, where the pastiss is completed with its reduced cooking juices and brown butter.
An elegant dish that tells the story of the emblematic refinement of historical cuisine. A chef who teaches us the importance of gesture and care. Perhaps not only in the kitchen.
